- 3 litros de leche de soja
- 1/2 taza de zumo de limón
Se calienta la leche de soja
Antes de que llegue a hervir, se echa el zumo de limón (también puedes usar vinagre o nigari) sin dejar de remover.
Se deja reposar
Pasa por un colador de tela la leche cuajada, para separar el requesón del suero (con el suero puedes hacer un nutritivo caldo con verduras).
Se prensa el requesón y se le añade sal.
Hay que dejar el tofu en un molde, tapado y en la nevera, para que tome consistencia. Se le pone un peso de un kilo encima durante un par de horas (puede ser una botella llena de agua sobre una tabla que lo prense
Si se quiere que el tofu sea más suave, se usa la mitad del limón con esto sera suficienrte para que salga más cremoso.
